Hot Apple Rum Cider

My friend Amanda shared this recipe with me years ago and I’ve made this drink every fall ever since. It is such a wonderful drink because it gives the comfort of a nice cup of coffee while relaxing you like a wonderful cocktail. Being pregnant this year I simply made mine without the rum and it was as delicious as ever.

This is a wonderful drink to make when you want to entertain. Pair it with some pumpkin muffins or better yet a pumpkin pie. Your friends will appreciate the effort and you’ll feel like a magnificent hostess.

4 cups of apple cider

½ cup dark rum

½ cup light rum

1 sliced orange

1 cinnamon stick

1 teaspoon of allspice

Add the apple cider, sliced orange, cinnamon stick and allspice into a medium to large pot. Allow the mixture to come to a boil for about 5 minutes. Reduce heat and simmer for 30 minutes. At the last 5 minutes add both rums. For a stronger drink, don't add the rum to the pot. You can add both rums to a mug and fill mug with apple cider mixture before serving.

I love this recipe but by all means add or subtract the amount of rum to your liking, different occasions call for different amounts. Let me know if you use the recipe and how you liked the drink.
